Canning Basics at Casa Azafran

Casa Azafran hosts Canning Basics

 Casa Azafrán stands at the gateway to Nashville’s most international and socially diverse district. Casa Azafrán is both a beautiful event space and home to a collective of nonprofits who offer services in education, legal, health care and the arts to immigrants, refugees and the community as a whole.

Casa Azafran has recently begun hosting cooking classes open to the public in their commercial kitchen. When I saw that Chef Carlos Davis from Riff's Food Truck and Riff's Catering was heading up a "Canning Basics" class to teach on how to preserve and pickle veggies, etc I knew I had to be there to check it out! I have never preserved as much as a pickle in my life so I was really excited about this :-)

Now that we have the wine situation under control.......let's start canning lol!

These are peppers that were pickled months ago and opened today to demonstrate how pickling fresh veggies correctly keeps them as fresh and colorful as the day they were canned

The hot water bath is a very important Sterilization step in the canning process!

Placing the Peppers in the jars

Viola!! Our peppers are pickled!

Once the lids are applied, the jars must be placed in the water bath again for additional sterilization and sealing

On to the Tomato Jam

Ok, say it with me now........."Peter Piper Picked a peck of Pickled Peppers. If Peter Piper Picked a peck of Pickled Peppers, where's the peck of Pickled Peppers Peter Piper Picked?"
