Cooking with Steam @ A-1 Appliance

I was recently invited to A-1 Appliance in Nashville for a cooking demonstration. They have a Wolf Convection Steam Oven that, as the name implies, cooks with steam. I'd never seen an oven like this before so I was interested to see how it works. The steam allows the food to cook much quicker and retains more moisture than regular conventional ovens

This Angle Food Cake cooked in about 15-20 minutes and was extremely moist and delicious

This casserole cooked in only 30 minutes and guess what...... the pasta was NOT pre-cooked! Dry pasta, along with the other ingredients, was placed in the casserole dish and mixed together. It was then thrown into the steam oven and cooked completely in that short amount of time. Cool...right?
