It's A Green Thing - Tayst

A couple of weeks ago I visited Tayst Restaurant - Nashville, Tennessee's first Green Certified Restaurant. Under the direction of Executive Chef Jeremy Barlow, Tayst utilizes small local farms that grow without pesticides and fertilizers.  They minimize waste through recycling and composting. They are also working to reduce, and ultimately eliminate, their carbon footprint.

I enjoyed dinning at the Bar and talking with Adrien Mathews aka A.D., the Wine Steward at Tayst, who's been with the restaurant since the beginning. He filled me in on The Green Thing  and the steps the restaurant takes to use local vendors and farmers to ensure the freshest product possible. 

 Since my visit to Tayst, I found out that they will be closing their doors at the end of 2012. Head on over to Tayst while you can!

Cooking with Steam @ A-1 Appliance

I was recently invited to A-1 Appliance in Nashville for a cooking demonstration. They have a Wolf Convection Steam Oven that, as the name implies, cooks with steam. I'd never seen an oven like this before so I was interested to see how it works. The steam allows the food to cook much quicker and retains more moisture than regular conventional ovens

This Angle Food Cake cooked in about 15-20 minutes and was extremely moist and delicious

This casserole cooked in only 30 minutes and guess what...... the pasta was NOT pre-cooked! Dry pasta, along with the other ingredients, was placed in the casserole dish and mixed together. It was then thrown into the steam oven and cooked completely in that short amount of time. Cool...right?

I attended the Tennessee Titans game the last Sunday in October when they played the Indianapolis Colts. The Titans did not win the game but, at least I was able to enjoy a great Sunday Brunch at the Nashville City Club that day! Take a look here:

Gumbo Anyone??

Gumbo Anyone??

My friend, Karesse, recently hosted an Election Watch Party 2012 at her lovely home with all things Red, White and Blue! She and her mother, Elaine Brown, cooked up a TOTALLY AWESOME pot of Gumbo!

Ms. Elaine, as we say in the south, "put her foot in that Gumbo!!!!" For those of you not from the south or not familiar with that phrase, to say someone "put their foot in [said dish]"  means that the home-cooked dish/meal is ABSOLUTELY AMAZING!

Did you catch a glimpse of Riffs Fine Street Food Truck on ABC's hit drama, Nashville, last night?!?! I was excited to see Riffs featured on this hit TV show because it is a staple in the Nashville Food Truck Community. Run by co-owners, Carlos Davis and B.J. Lofback, Riffs is the 2011 and 2012 Winner of Nashville's Battle of the Food Trucks!

I caught up with them at Centennial Park one Saturday afternoon this Autumn and was treated to some mighty FINE Street Food!

Mac & Cheese, Jerk Chicken with Pineapple (it's hiding behind the chicken :-) ) and Kimchi Fried Rice. This was GREAT!

Nashville Banker, Former college football player and author, Dewayne King sat down with me for lunch at the Nashville City Club to discuss his book, Control Your Destiny: A Practical Guide to Success for Today's Student Athlete .
